DSM delivers the most reliable, attractive and downright cheap bubbly in the Northwest, and this is their best bottle. Pale salmon, with Pinot-scented light cherry and strawberry fruit, it is technically off-dry but tastes more like a brut. Good concentration through crisp, yeasty finish.

Boldly flavored, with massive doses of tart green apples pumped up by bubbles and a trace of sweetness. Simple and a bit sugary, it would be a good base for ldquo;Champagnerdquo; cocktails.
