Jean-Marc Roulot makes every drop of juice he touches turn to gold. The ethereal beauty behind his Aligoté is rooted in the marriage of ripeness and steely acidity and mineral. Generally an austere variety, Aligoté can have softer manifestations, of which this is one. Roulot is an ultra-traditionalist in the vineyard and cellar, using only 15% new oak as though to sand the angular edges of the wines.
