Yields in 99 chez Chevillon were reasonable in the context of the vintage, reports Robert's son Denis. In contrast to many growers who will bottle early to preserve freshness, the Chevillon 99s will not be bottled until May or June and without fining or filtration. New oak here generally averages around 30% and Denis told me that is the same proportion that they used for their 99s. Chevillon is one of the most consistent domaines in Burgundy and the 99 vintage is just one more in a long string of successes. Not quite as big as some Chevillon Vaucrains I have had in the past but perhaps better balanced and with more refinement. To be sure, there is the classic Vaucrains structure and note of rusticity but also a surprising amount of elegance in its sweet black cherry fruit and intensely sappy flavors with impressive length. Denis Chevillon characterizes 2002 as a grand millésime with lots of material, excellent color, relatively low yields as the severe green harvest that we did plus the drying effect of the north wind reduced our take to under 40 hl/ha. We had excellent sugars as every wine, even the Bourgogne was at or above 13% potential but even with the elevated sugars, the grapes retained their acidities. In short, we've been lucky as '99 is the greatest vintage that we've seen here at the domaine in years yet 2002 is every bit as good. The present plan is to bottle the wines in the spring.
