Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

The Autard estate has been producing a bevy of top-scoring wines in recent years.Located in the village of Courthezon, they own vines nearby, in the Cotes du Rhone appellation, as well as in Chateauneuf. Their approach is modern: hand sorting, destemming, fermentation in stainless tanks, and new oak barriques for aging. The barrel cellars are quite extraordinary: they are cut out of sandstone near the Rhone River. The 2005 Chateauneuf boasts dark fruits and notes of wild flora. It has been rated '91' by the Spectator.
