Winemaker's Notes:

Grape : ChardonnayAge of the vineyard : 15 years old. Yields and density : 60 hl / ha with 3700 plants / ha.Terroir : situated not far from the well-known “Clos de Vougeot”, hillsides with gentle slope, East-south-east exposure, 350 m above sea level, red soil with superficial structure (20 cm deep), stony (50 %) and well-ploughed.Way of culture: integrated pest control,organic fertilizer. Fermentation : the malolactic fermentation is assured 50 % in barrel (15 % in new barrel) and 50 % in stainless vat, temperature 18-19°C. Ageing : half in stainless vat about 16 months, the other half in the barrels is “batonné”.Wine Tasting : nose: fruity (pear), floral (white flowers), with a woody note. Mouth : elegance first, well balanced, and then fat, mellow, and fullness of the Chardonnay Grape, ending on a mineral note, long and powerfull. Food Pairing : it accompanies fishes and poached or creamed fowls, and strong cheeses. Serving : 2 - 7 years. Temperature : 12 - 14°C
