Food Pairings for Domaine les Pallières Red Rhone Blend Gigondas Terrasse du Diable
Inviting nose of cured meat (ham) and earth. On the attack and in the mouth has smooth, round, fuzzy tannins which quickly give way to sweet berries and oak and earth. Not strong spice or pepper. Moves easily into a finish of fruit, sweet veggies, and a hint of fresh herb (basil or mint). Off-dry, medium acity and tannin, medium body, decent balance, a bit complex.
This is a well-structured wine from high-altitude vines. Robert Parker notes an “extraordinary bouquet of black raspberries, kirsch, licorice, crushed rocks, and flowers,” and calls the wine, “full-bodied with sensational texture, purity, and length as well as remarkable elegance and freshness.”
