Jean-Marc Pavelot told me that 2003 was a remarkable vintage. Imagine picking in August? We began on the 30th and brought in a crop with low yields, high sugars and barely adequate acidities. The average yield was down 50% though depending on the parcel, they were down from 30 to 60%. Sugars ranged from 13 to 14.5% and I did add tiny acid corrections to most but not all wines. We did a cold soak of 3 to 4 days and punched down for only the first two days as I thought that was more than enough because the extraction seemed almost to happen by itself.
