Maceration, alcoholic and malolactic fermentation are induced in Burgundy oak tanks and the wine is matured for 20 months in new French oak barrels.
The wine is quite dark, concentrated, with complex flavor and is reminiscent of dark matured fruits. Its blackberry fruit shows spice and depth and finishes dry.
This wine will reward years of cellaring (15-20 years).

- Epanomi Vin de Pays 17 Drink 2006-2020 Avaton, meaning 'unknown territory', is a blend of Limnio, Mavroudi and Mavrotragno. Alcoholic and malolactic fermentation in Burgundy oak vats, followed by 20 months' maturation in new French oak. Very deeply coloured, with a wide deep cherry rim. On the nose, both complex and subtle, with a good deal of sweet spicy cigar-box aromas. Very ripe black fruit. Then a great whack of firm but ripe chalky tannins, fresh, cleansing acidity, a real thickness and weight in the mouth. Long and satisfying. Still in its infancy.
