Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Just gorgeous on the nose, sharp and savory with coffee and green herb accents to the core of meaty dark berry fruit. The oak impact is modest here adding an attractive burnt sugar and spice note but not becoming intrusive. Absolutely fresh, precise and transparent on the palate with a tense mouthfeel supporting simple if pure and vibrant fruit that never seems overwrought. There’s some mineral notes as well, adding a little complexity. Absolutely gorgeous and drinking at peak. 93pts

Vinous and bright, this is a claret with red-fruited intensity. It has the cool freshness of Santa Cruz Mountain cabernet, dark and woodsy with the gentle richness of savory fruit tannins. Decant it for venison chops.

Even sexier than the 2008, the 2009 Cabernet Sauvignon comes across as considerably sweeter and rounder than its older sibling. Layers of expressive fruit linger on the radiant, juicy finish. This is an especially open and expressive Cabernet Sauvignon. The sweet tannins should allow it to drink beautifully upon release. The blend is 75% Cabernet Sauvignon, 12% Merlot, 8% Cabernet Franc, 4% Petit Verdot and 1% Malbec. Anticipated maturity: 2012–2019.

The 2008 Cabernet Sauvignon is a beautiful fleshy wine laced with sweet tobacco, tar, game, grilled herbs and dark red raspberries. It shows fabulous depth and richness, with great personality. Firm tannins frame the finish in this exquisite beauty. The 2008 is more complex than the 2009 tasted alongside it, but will also require slightly more time. The blend is 77% Cabernet Sauvignon, 10% Cabernet Franc, 9% Merlot, 3% Petite Verdot and 1% Malbec, all from five vineyards in Saratoga and Los Gatos. Anticipated maturity: 2013–2023.

Chunky and rough going from the get-go, this shows pronounced roasted herb and savory dried berry flavors that will require patience, as this wine often does. This also rewards cellaring, and it’s one of the few wines I’d lay down for a nap rather than tackle now. Best from 2015 through 2025.
