Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Despite the lack of oak, this Chablis has a round and supple mouthfeel. There are aromas of honey and orange zest, while the palate is citrus with minerality on the finish.

Winemaker's Notes:

Everything in the winery is geared towards traditional winemaking. Since there are no Grand Cru bottlings the Desvignes family sees no need to bring oak into the winery. The Chablis AC comes from select plots with a favorable S,SE exposure and a mild hillside grade where the soils are particularly rich in Kimmeridgian clay.
