Domaine des Baumard Coteaux du Layon Cuvée le Paon 2003

Winemaker's Notes:

Quarts de Chaume wine, always sweet, is made by hand-selecting bunches of very ripe Chenin Blanc, often with high levels of "ourriture noble". When enjoyed young, the bouquet of Quarts de Chaume is a complex combination of peach, apricot, and subtle flowers. As the wine ages 10 years or more, the bouquet becomes more honeyed and the flavor deepens, with an attractive bitter finish balancing the sweetness. Enjoy this unique wine as an apertif, or with foie gras, fresh fruits, blue cheeses, or delicate desserts.

Medium sweetness, but not overdone. Oily. Raisin, without the super-sweet Sauternes thing. Pear. Almost tastes fortified.

...very powerful, concentrated core of almond, white peach, honeysuckle, mineral and candied lemon peel, but all is meshed perfectly together on a creamy, porcelain texture and glides effortlessly through the finish. Extremely long and finely detaile... Wine Spectator. A Chenin Blanc wine from Loire Valley in France. 2003 Domaine des Baumard Quarts de Chaume 375ml
