Sablet Côtes du Rhône Villages Ténébi: 100% Counoise, from clay, sand and silt based-soil. 40-year-old vines with a 40 hl /ha yield. 28 day fermentation period in cement tank, with no destemming. Matured in barrel during two winters, and bottled in the Spring without filtration.

Deep ruby color with a pleasant bright fruit nose that shows hints of black olives and spice. Medium to high tannins and a medium body -- notes of oak, leather, dark chocolate and black fruits. Pair this with roasted red meats or powerful cheeses. It's not a light wine.

Nice, but tart. Almost to acidic for my taste. Not as much so as the 2003.
