All vineyards are hand harvested. The white varietals are picked early to preserve acidity and aromatic intensity and are fermented separately according to varietal under controlled temperatures. After several years of experimenting with barrel aging, Jeune has determined that the whites perform better without exposure to oak. The red varietals are not destemmed before fermentation.

Tasting Notes Color: Red (Deep Ruby) Nose: Red fruit, chocolate, and fig Taste: Fruity and spicy. Decent length. Mouthwatering acidity gives way to gentle tannins in the long finish, though fruit character persists. Summary: A medium bodied wine featuring loads of red fruit (though others note black fruits), along with a spiciness that is complemented by the wine's prickly mouthfeel. This wine is unusual for a Cotes du Rhone in that it is made primarily from Counoise. This grape is one of the 13 varieties allowed in the production of Chateauneuf du Pape, where it can lend a spiciness or prickliness to the final blend. These characteristics of the Counoise grape are pronounced in this Cotes du Rhone. Drink now.
