Dark red. Lush and open on the nose, showing aromas of spicy red berries and cassis accented by subtle notes of violet and garrigue Quite suave and elegant in texture, with the deep, round berry flavors gaining weight as they open in the glass. Finishes supple and gently tannic.

The 2007 Chateauneuf du Pape is Sabon's finest example of this cuvee I have yet tasted. It boasts a fabulous blue/purple color as well as a gorgeous nose of creme de cassis, kirsch, licorice, incense, and spice. Deep, full-bodied, and multilayered with excellent purity, depth, and length, it should drink beautifully for 20 years.

Deep ruby. Fresh raspberry and strawberry aromas are elegant and precise. Bright, racy and poised, with sweet red fruit and gentle mineral flavors and a distinctly silky texture. Finishes impressively pure and long, with precise red fruit flavors.

Really packed, with lush layers of blackberry ganache and currant confiture, this just pumps out velvety fruit backed by a racy minerality and a range of exotic spices in the background. Long, pure and deftly balanced through the finish. Drink now through 2027.

The 2004 Chateauneuf du Pape, which is 80% Grenache aged in tank or foudre and the rest, Mourvedre and Syrah, aged in small barrels, is a strong effort. Dense ruby/purple with a sweet nose of flowers, blackberries, sweet raspberry liqueur and Provencal herbs, it is dense, rich, medium to full-bodied, but pure, stylish, and delicious already. It should continue to evolve for a dozen or more years.

"I have had so many terrific examples of the Chateauneuf du Pape Chaupin that it’s hard to say the 2007 is the finest of all, but it is truly an amazing, old vine Grenache cuvee. Just under 20,000 bottles were produced from sand and clay soils. This inky/purple-colored wine reveals exquisite aromatic fireworks consisting of creme de cassis, black raspberries, licorice, incense, and spice, awesome fruit, major concentration, and a serious finish of close to a minute. For a wine of such enormous size, it is remarkable for its overall equilibrium and freshness...95-99." WA 10/08
