Domaine de la Chevalerie has been in the Caslot family since 1640; the house, office, and winery sit on one of Touraine's largest, of not the largest, cellars, a great cavernous affair dug out between the 11th and 13th centuries to provide stone for the local village of Restigne. Current "patriarch" Pierre Caslot is today ably assisted by his son and daughter, Emmanuel and Stephanie, who have been instrumental in upgrading the winery and converting to organic farming practices.
