Purple color of normal intensity. Aromatic and fruity nose with a nice smell of hazelnut red fruit and leather. The palate is well built pulpy on entry mellow in the middle and tasty. This highly regarded estate is planted with 81 acres of red grapes (65% Cabernet Sauvignon, 30% Merlot and the balance split between Cabernet Franc and Petit Verdot -the last planted in 1995). The top soil is dark sand mixed with gravel over a subsoil of gravelly clay interspersed with iron-rich alios. The wine is vatted in squat stainless tanks that are wider than taller, allowing optimum extraction, and the wine undergoes malo-lactic and is aged in 50% new oak for around 21 months. Moderately dense in color, the nose is soft and creamy with muted red and black fruits. Subtle and refined, the '05 shows an expressive finish with a smoky oak note. Limited to 1,200 cases per vintage, the white wine of Domaine de Chevalier is sought out for its class and ability to age. The white varieties are Sauvignon Blanc (70%) and Semillon (30%). The wine remains in tank on its gross lees until the middle of the second year when it is racked, leaving the fine lees, and then is racked again to barrels after the summer. The '05 is closed and backward to the nose (altogether typical of Chevalier). More expressive on the palate with great finesse and length in a tight framework.
