Food Pairings for Domaine Christian Moreau Père et Fils Chardonnay Chablis
Almost ginger and apple on the nose, this supremely well-made Vaillons has the exactitude and cleanliness we look for in Premier Cru. Always among the best quality cru, Vaillons exudes itself rather than fruit similitude: on the palate there is more acidic interpretation of ginger, apple and Korean pear. A wonderful wine at a wonderful price. Buy a case.
From the desirable rive gauche of the River Serein, facing southeast, the Cru Vaillons rarely disappoints and this 2008 from Moreau et fils is no exception: with a clean, lean floral bouquet and enticing dandelion robe the wine exudes yellow sapphire clarity. Upon entry, the lively acidity hints at further aging but provides the usual peachy, Granny Smith apply flavor and lasting finish. An excellent Premier Cru that can match not a few Grand Cru in appeal if not power.
Nicely mineral and well balanced with a solid amount of oak for a Chablis. Very nice. Served with heirloom tomato salad and charcuterie. Followed by sea bass.

Pale, bright yellow. Ineffable high-pitched aromas of pineapple, white flowers, ginger, quinine and crushed stone. Boasts superb purity and penetration to its flavors of lemon, grapefruit, pineapple and wet stone. Best today on the very long, echoing finish, which saturates the palate with dusty stone. This has turned out very well but calls for at least five years of patience.
A subtle but intriguingly diverse range of floral and herbal aromas rise from the glass of Moreau 2011 Chablis Les Clos, along with intimations of lemon and white currant that prevail on a substantial but surprisingly tart palate. The lift, clarity, complexity and allure of the corresponding Valmur are not equaled here, at least for now; but there is a lovely persistence of floral and herbal essences as well as refreshing primary juiciness and sheer wet stone. Plan to follow this through at least 2018.
Familiar scents of wet pebbles and blanched nuts are matched by flavours of crunchy green apples and bracing acidity in this elegant and persistent French white.

Bright, pale yellow. Aromas of yellow fruits, vanilla, truffle and spearmint, plus a whiff of orange zest. Juicy, firm and dry, with strong acids framing the citrus, mineral and musky spice flavors. The pure, brisk village wine reminded me in style of a 2004. Classic finishing flavors of lemon and minerals.
Here the nose is also distinctly cool and admirably pure with notes of fresh acacia blossom and crushed stone notes that complement the equally mineral-suffused middle weight flavors that possess superb intensity and stunning length where the finish ...
