Food Pairings for Domaine Christian Moreau Père Et Fils Chablis Premiere Cru Vaillons
This 2008 edition of the Moreau Vaillon is typically more creamy and less austere than other producers and negotiants. Although this is a matter of taste, one can still say with some authority that the usual granny smith apple (especially peelings therefrom) and light garden floral bouquet is most pleasing. The wine is delicious now, but has plenty of acid for up to 6 more years of prudent cellaring possibilities. The wonderful mineral-like short flavor will appeal to all lovers of this best of the best left bank of the Serein Chablis. Excellent value!
Nicely mineral and well balanced with a solid amount of oak for a Chablis. Very nice. Served with heirloom tomato salad and charcuterie. Followed by sea bass.
