From the desirable rive gauche of the River Serein, facing southeast, the Cru Vaillons rarely disappoints and this 2008 from Moreau et fils is no exception: with a clean, lean floral bouquet and enticing dandelion robe the wine exudes yellow sapphire clarity. Upon entry, the lively acidity hints at further aging but provides the usual peachy, Granny Smith apply flavor and lasting finish. An excellent Premier Cru that can match not a few Grand Cru in appeal if not power.

Bright, pale yellow. Aromas of yellow fruits, vanilla, truffle and spearmint, plus a whiff of orange zest. Juicy, firm and dry, with strong acids framing the citrus, mineral and musky spice flavors. The pure, brisk village wine reminded me in style of a 2004. Classic finishing flavors of lemon and minerals.
Greenish straw. Musky ginger, quinine and white pepper notes lift the fruit aromas of lemon, melon, peach and passion fruit. Juicy and quite firm in the mouth, with excellent focus to the lime zest and mineral flavors. This bracing, dry, tangy wine also shows the plumpness and density of the year. An excellent village offering.
The generic Moreau 2008 Chablis — issuing once again largely from advantageous locations behind Vaulorent and in Pargues — offers generous, luscious white peach and honeydew melon along with the tartness and pungency of grapefruit, nettle, and white currant. Hints of peony drift through its subtly creamy, chalk-dusted yet persistently refreshing palate. This should continue to display subtle satisfaction over at least the next 3–4 years.
Scents of rice and toasted lees develop into spice and an oyster-shell complexity as this wine takes on air. Itrsquo;s juicy, rich and long, with a hint of oxidation that suggests drinking it now with a creamy shellfish stew.
Fresh and lemony, offering Granny Smith apple and mineral notes. Balanced on a lean frame, with a mouthwatering finish.
