Domaine Chevrot Bourgogne Aligote 'Tilleul' 2007

Winemaker's Notes:

Located in the Maranges region at the southern entrance to the world renowned Côte de Beaune wine region. The Cheverot estate consists of 15 different appellations spread over a total area of 20 hectares. The different appellations are approved by the French national institute (INAO) which strictly control the origin, production and quality of wines in France. The cellar located under the house was constructed in 1798 and holds the French oak barrels in which the wine is aged. The property has its own winery, bottling facility and storage facility. This allows for control over the wine from start to finish. The bottle store room is thermo regulated allowing the wine to mature in the best way possible. Aware of the immense potential harbouring in the parcel of Aligote lying just across from the domaine, the family decided to treat this as a one-of-a-kind. Raising the foliage to improve grape ripening, working the soil with a horse rather than machines and maturing the fruit for 15 months in oak barrels up to several years old, all helped make this wine stand out amongst the rest. For the nose, a delicate woodiness is released, combined with subtle violet, almond and a hint of pine-nuts. Clear, vibrant and intense in the mouth, the Tilleul reveals lemon, pear and green currants, letting the fruity aroma linger on to prolong the experience. You may well be surprised to find yourself musing over freshwater fish roasted on almonds or other exotic poultry-based dishes.
