Tasted at winery. Very elegant bubbly that is elevated just above the Étoile Brut and Rosé. Nuttiness is very present with bread and citrus (lemon). Later in the mouth I sense apricot. Here we have an impressive and long finish (seems spicy).

In keeping with the traditional rosé winemaking method, a small amount of Pinot Noir is added prior to tirage, or second fermentation, to create the deliciously distinctive color. Coveted by the most passionate connoisseurs for its unique character and limited availability, étoile ROSÉ sparkles with brilliant salmon color, bold yet refined berry flavors and excellent richness and length. This cuvée of étoile ROSÉ rested for 5 years on the yeast, evolving graciously to be enjoyed when released and for years to come. TASTING NOTES * Rich, yet elegant aroma of plum, dark cherry fruit, nutmeg and cocoa. * Bold, yet refined palate with persistent flavors of raspberry and French toast. FOOD AND WINE PAIRING Winemaker Tom Tiburzi and Chef Chris Manning suggest serving it with foie gras, entrees with rich cream sauces, lobster, veal and simple desserts such as créme brûlée.
