What to Expect

Chablis is a region of France's Burgundy region responsible for some of the most distinctive expressions of the Chardonnay grape. On the limestone rich soils of the area, Chardonnay produces wines that can be steely, yet rich with orchard fruits and mineral tones. Unlike the typical white Burgundy, most Chablis sees little or no new oak which allows the grape to express itself with a purity that barrel aging can obscure. Often quite reticent in their youth, Chablis may require several years of ageing in order to be able to fully express the depth and richness it keeps in reserve.

DOMAINE BILLAUD-SIMON
CHABLIS GRAND CRU
VAUDESIR 2002

Opened THUR 21/05/09
On nose hints of green melon
In the mouth, ripe round fruit with loads of lemon, a robust full-bodied wine that is drying on the finish with a length that goes on forever.
This is a drinking pleasure, I would LOVE to say there are flavors of white stone and exotic spice, NO! This is just one big full, round lemony Chardonnay and I mean a big mouth full of wine.
One of the biggest & fullest Chablis I have ever drunk and it’s very, very good.
GOD only knows how long this wine will read more...

IWC 90+ (8/2004): Pale color. Reticent nose hints at lime, menthol and mint. Dense, juicy and aromatic on the palate, with enticing lemony cut. Mineral and floral flavors are still a bit tightly wound and youthfully aggressive, and there's a slight alcoholic warmth. Most impressive today in its very persistent finishing flavors of white flowers and powdered stone.
