95 points - Wine Enthusiast: "This is a classic Dom Prignon vintage. It's big and fruity initially, a mouthful of ripeness. Then the texture and structure of this dense wine come through. Its as much wine as Champagne, rich, the apple and fresh pear flavors vying with yeasty and a tense crispness. Worth aging, it will be even better in 3-4 years." (12/08) 94 points Robert Parker's Wine Advocate: "The 2000 Brut Dom Perignon is a gorgeous, seductive wine that floats on the palate with remarkable grace. Toasty aromas meld into freshly cut flowers, apricots and pears, with sweet notes of mint and licorice that linger on the long finish. This perfumed, inviting Dom Perignon is elegance personified, and in this vintage the wine fully merits its lofty reputation. According to winemaker Vincent Chaperone there is only one disgorgement date for the first release of Dom Perignon, and the 2000 was disgorged over a period of weeks in March and April, 2007, 2007. Anticipated maturity: 2008-2018." (12/08) 91 points Wine Spectator: "Starts out round and plush, then the structure takes over. Light peach and berry flavors prevail as this plays out on the lingering finish. Give it a little time to integrate, but this should develop well. Best from 2009 through 2024." (12/08)
An intense, complex nose of toast, yeast, earth, brine and mushroom opens this luxury cuvée. Medium-full and soft by Dom Perignon standards, the palate offers subtle, light green herbs, sweet citrus and honey flavors. Lemon and lime predominate on the long, smooth finish. Classy stuff, if not possessed of the reserve or spine of the top vintages. Fortunately, that actually means it drinks better now than most Dom of comparable age. Best now through 2010.
An intensely flavored Champagne, displaying tropical fruit, berry and citrus aromas and flavors enmeshed in finely woven texture, ending with an aftertaste of dried fruit. Good firm structure lends support. Drink now through 2010.

Another great bottle of Dom Pèrignon. Aromatic and exciting, featuring straw, lemon-lime and apple character, medium body and a fruity, crisp finish... Drink now or hold.
Straw. Medium full body. Medium acid. Lots of fruit. Toast, citrus. Pronounced and focused toasted bread notes. Layers of rich fruit are silky in the mouth, developing through an impressive length. Will acquire more complexity with age.
Complex fruit flavors and a creamy, melt-in-your-mouth texture make this especially seductive. It combines rich fruit with an intriguing doughy accent that comes from long aging on the lees. Has polish, elegance and finesse. Drink now through 1997.
Tremendous aromatic intensity offering hints of bread dough Wheat Thins tropical fruits and roasted hazelnuts. Medium to full-bodied with crisp acidity buttressing the wines wealth of fruit and intensity it comes across as extraordinarly zesty well-delineated and incredibly long on the palate.
