Wine & Spirits ReviewThe bubbles and gentle mousse of this wine are mirrored in its feel and body, a quiet, luscious chardonnay Champagne. Its soft candied lime flavors tighten around a chalky acidity; the texture is firm and the aromas develop depth and length with air. Elegant now, this should grow more complex with several years of age.Wine Tasting NotesThis wine is full of life, with a fresh nose that dances through a spiral of aromas, blending hints of angelica, dried flowers, pineapple, coconut, cinnamon, cocoa and tobacco. With a fullness in the mouth, its earthy, smoky, pearly complexity rises to the surface, underscored by the vibrant warmth of peppery spice. The sensation of intensity develops and melts into a deep, rounded heart, with a fruity, exotic maturity and a slight touch of aniseed. This sensation, almost unsettling, is even more pronounced in the finish, while the notes of spice, still present, remain discreet, with toasted, iodine flavors.

It has been produced since the 17th century, named after its creator, Benedictine monk Dom Pierre Pérignon, who some say is the “Father of Champagne.” It was first produced commercially in 1936. The wines are only available from certain vintages and are highly coveted. The Chef de Cave is Richard Geoffrey, a former physician who began his wine career as the technical advisor for Domaine Chandon in Napa Valley, CA. Wine Advocate ReviewThe profoundly rich 1990 Dom Perignon is a creamy-textured, full styled offering that loses none of its elegance in spite of its flavor authority. It will improve for 5-10 years, and appears capable of surpassing the fabulous 1985 and 1982. It seems obvious that the quality of the 1990 Champagne vintage is going to be remarkable, and the world-wide demand will be unprecedented. The message - buy them now!
