Percentage Grape: Vineyards are cultivated with the traditional sapling"little tree" method from Salento for a grape production of 80-100ql / hectare. The 75% is Negro Amaro grape and the 25% is Black Malvasia from Lecce<br/><br/>Soil: chalky and clayey<br/><br/>Growing Climate: Mediterranean clime with mild Winters and dry Springs and Summers<br/><br/>Date of Harvest: From the 15th of September<br/><br/>Type of Harvest: Grapes are manually harvested and put in the baskets in the early morning<br/><br/>Vinification Length: Stored for no more than 5 years<br/><br/>Vinification Method: Traditional soaking method for 4-5 days and fermentation with controlled temperature<br/><br/>Vinification Temperature: Drink with a temperature between 18° and 20° C<br/><br/>Malolactic: Piloted in tanks<br/><br/>Alcohol Percentage: 13.1 %<br/><br/>Sugar Rate: 13-50 g/l
