Percentage Grape: Vineyards are cultivated with sapling "little tree" method for a grape production of 70-80 ql / hectare. 75% of Negro Amaro grape and 30% of Black Malvasia grape .<br/><br/>Soil: Chalky- clayey<br/><br/>Growing Climate: Mild Winters and very dry Springs and Summers<br/><br/>Date of Harvest: During the second and third decade of September<br/><br/>Type of Harvest: Grapes are manually harvested in the early morning<br/><br/>Vinification Length: 5-6 years if it is stored in the right wine cellars<br/><br/>Vinification Method: Traditional soaking method of 4/5 days and fermentation with controlled temperature<br/><br/>Vinification Temperature: Drink at 18° C<br/><br/>Malolactic: Piloted in silos<br/><br/>Alcohol Percentage: 13.2 %<br/><br/>Sugar Rate: 13-50 g/l
