Percentage Grape: Vineyards are cultivated with Apulian sapling "little tree" method for a grape production of 80-100 ql / hectare. 100% of Negro Amaro grape.<br/><br/>Soil: Chalky - clayey<br/><br/>Growing Climate: Mild Winters and hot and dry Springs and Summers<br/><br/>Date of Harvest: During all the month of September<br/><br/>Type of Harvest: Grapes are manually harvested and are put in basket paying attention to not damage the bunches of grape during the first hour of the morning<br/><br/>Vinification Length: 2 or 3 years if it is stored in fresh and ventilated wine cellars<br/><br/>Vinification Method: Wrapping soaking method for about 20 hours with the following extraction of the 30% of the juice which is put to ferment with a controlled temperature of 13° C .<br/><br/>Vinification Temperature: Drink at 10°-12° C<br/><br/>Alcohol Percentage: 13.1 %<br/><br/>Sugar Rate: 6-12 g/l
