Percentage Grape: Vineyards are cultivated with sapling "little tree" method for a grape production of 80-100 ql/h in which 65% is Negroamaro grape and 35% is Black Malvasia grape from Lecce<br/><br/>Soil: Chalky- clayey<br/><br/>Growing Climate: Mild Winters and very dry Springs and Summers<br/><br/>Date of Harvest: First or second decade of September<br/><br/>Type of Harvest: Grapes are manually harvested during the first hours of the morning<br/><br/>Vinification Length: 4-5 years, if stored in appropriate wine cellars<br/><br/>Vinification Method: Traditional soaking of 4/5 days and fermentation with controlled temperature<br/><br/>Vinification Temperature: Drink at 18°-20° C<br/><br/>Alcohol Percentage: 13.2 %<br/><br/>Sugar Rate: 13-50 g/l
