According to Jacqueline Friedrich, "Silex, barrel-fermented and aged, is made from 35 to 65 year-old vines on the silex-rich soils which Dagueneau believes make the most structured, 'intellectual' Pouillys. It confirms Dagueneau's view that Sauvignon is one of the most complex and subtle grapes and that its wine are as noble as white Burgundies."
An astonishing wne. Starts off as a classic, zesty sauvignon - a classy,mineral wine but not perhaps extraordinary. However, within an hour in the glass it becomes a truly overwhleming experience bursting with layers of beautifully restrained fruit whilst losing none of its steely edge. Ambrosial.
Lemony / chalky nose. Well balanced with good acidity. There's excellent mouthfeel, and the finish is a mix of florals and tartness.
