The non-vintage Cava Dibon Brut Reserve (lot 111409) is based on the classic Cava grape varieties with a secondary fermentation after 16 months in bottle. It has a simple bouquet that has pleasant, light floral aromas. The palate has a crisp citric entry with touches of Clementine and grapefruit with fine delineation towards the fresh, apple-y finish. Drink now.

Dibon is new to us, and after tasting this complex, well-made Cava we are happy to make its acquaintance. The nose offers regal yeast and richness, while the palate has complexity to prop up apple, citrus and grapefruit flavors. Solid from front to back, with health and freshness.

Light apple aromas are elegant and not over the top, while the tangerine and orange flavors are lean and focused. This is a light-framed Cava with a clean, fast, tasty profile and finish. Not yeasty or heavy at all.
