Dibon is new to us, and after tasting this complex, well-made Cava we are happy to make its acquaintance. The nose offers regal yeast and richness, while the palate has complexity to prop up apple, citrus and grapefruit flavors. Solid from front to back, with health and freshness.
The non-vintage Cava Dibon Brut Reserve (lot 111409) is based on the classic Cava grape varieties with a secondary fermentation after 16 months in bottle. It has a simple bouquet that has pleasant, light floral aromas. The palate has a crisp citric entry with touches of Clementine and grapefruit with fine delineation towards the fresh, apple-y finish. Drink now.
Super concentrated, toasty, and loaded with lime, melon and pear overlaid with hints of yeast and earth. Why pay $40 for Champagne when you can have something so wonderful for so much less? Donandrsquo;t bother to wait for a special occasion andmdash; celebrate your Tuesday with the Dibon, itandrsquo;s guaranteed to make you smile!
