Diamond Creek Cabernet Sauvignon 2000

Winemaker's Notes:

The vintage was very kind to hillside wines. The heat provided as much ripeness as necessary to fully ripen tannin while the elevation helped circumvent the extremes of the strongest temperature spikes. This true ripeness manifests itself in a saturated black/garnet hue with opening notes of classic Cab character: scorched earth, blueberries, sweet tobacco and black currants. There's a sweetness to the nose that follows through on the palate with more red, blue and black fruit flavors, sweet cream, pain grille and cassis. The structure of the site comes up only in the very end to help prolong the finish and give focus to the perfectly round fruit. Established in 1997, Diamond Creek Estate is an award winning family owned and operated vineyard and olive grove. Diamond Creek Estate is situated on the northern slopes of Mittagong, around 120 kms south of Sydney, in the Southern Highlands region of New South Wales. The property for many years was dairy country, enjoys rich basalt soil, northern sun and although at an altitude of 680 metres, it has an unique topography, which leaves it relatively immune from frost. This creates an ideal microclimate for cultivating premium quality, cool climate wine grapes and the finest olives for extra virgin olive oil. The vineyard occupies around 15 acres and a similar area is dedicated to olive trees. The vines are subject to intensive management for improvement, hand pruned and leaf-plucked as required. They are personally tended, cropped for optimised yields to produce premium quality cool climate wine grapes. Diamond Creek Estate Wines are produced only from estate grown grapes. The region, although the newest recognized geographical indication, is fast being acknowledged as a premium cool climate area and this is consistent with our objective to produce first class wines that will compete with any in Australia and overseas. Smooth, rich and complex, with a concentrated core of earthy currant, black cherry, herb and toasty oak. Plush textured at first but then the tannins flex their muscles, suggesting a need for cellaring. Long finish.
