- Fermentation and Blend: All our reds are made in the gravity style with the intent of producing soft, supple wines with smooth texture. All the wines are aged 21 months in French Oak (90%) and American Oak (10%) and racked quarterly from barrel to barrel. The wines are lightly fined with no filtering. Ottimo is a blend of 40% Merlot and 60% Cabernet Sauvignon.
