All of the Pinot Noir was fermented with native yeasts and the 12% of the wine was put into new French oak barrels and the rest into 2 and 3 year old French oak barrels where it underwent secondary fermentation.

Deer Creek Vineyards is a 70 acre property with 40 cultivated acres which will produce in excess of 10,000 cases during calendar year 2010. Deer Creek Vineyards is a 70 acre property with 40 cultivated acres which will produce in excess of 10,000 cases during calendar year 2010. The variety and quantity of grapes are Pinot Noir (20 acres), Pinot Gris (12 acres) and Chardonnay (8 acres). The anticipated 2010 yield in tons will equal approximately 160 tons. The balance of acreage is committed to approximately 7,590 square feet of added improvements, including, residence, shop, wine storage, and tasting room. Property also includes grazing pastures and hay production. Superior water rights provide abundant access to both primary and secondary water resources.
