Food Pairings for De Bortoli Cabernet-Merlot Sacred Hill
Nose: green capsicum, herbaceous, mint, some cassis maybe, prunes/dried fruit, oak. Palate: capsicum, cassis, blackberry, mint. Sharp, fresh acid. Tannins chewy, but a little astringent and drying. Given that De Bortoli advise only cellaring this wine for "up to 2 years" (for the current 2008 vintage, at least) it has lasted pretty well.
