Aromas of eucalyptus, herbs and maybe a hint of licorice. This cab is a nice big mouth full of a chocolaty cassis, a hint of espresso and spice...and maybe a touch of fermented dark berry leather...if that makes any sense. This is a yummy luxurious cab. We've never been cab drinkers, and maybe that's from inexperience with this varietal, but this one can make us a fan. We cellared it for a year from when received, and then let it decant about 40 minutes before drinking, which was recommended if you are drinking it relatively young. Ours was only 3 years old and this wine should be good for about 10. Unfortunately, this 2004 Signature cab is sold out. Try your local wine specialty store. UPDATE: we only drank half the wine, sealed it, and place it back in the wine fridge and finished it the next night. It was even better. A little more smooth and gained some chocolaty tones.

Winemaker's Notes:

TASTING NOTES Enticing aromas of vanilla bean, blackberry and crème de cassis introduce this bold, yet harmonious wine. A rich and well-focused palate is endowed with layered flflavors of wild black cherry, plum and espresso. An elegant and generous fifinish is accented by delicate hints of cinnamon, nutmeg and spice box. VINIFICATION ~ Meticulous attention to detail in vineyard and minimal cellar handling ~ Hand-harvested into small 28 lb. baskets ~ Hand-sorted twice, before and after de-stemming ~ Fermentation includes cold soaking for 4 days, with gentle pump-overs and extended maceration for optimal color extraction and tannin management ~ Barrel lots were racked 2-3 times per year for clarity
