Grape Variety 65% cabernet sauvignon, 20% cabernet franc and 15% merlot grapes grown in the Henschke Eden Valley estate vineyard. Wine Description Deep crimson in colour. A sweet complex bouquet of violets, cassis, cedar, tar and hints of anise, plums herbs and bacon. The palate is generous and ripe with blueberry pie and subtle hints of herbs and rosemary. Rich and juicy with fleshy textured fruits, excellent depth and concentration; very complex with layers of fine-grained velvety tannins. Cellaring Potential Excellent vintage, optimum year 2011. Serving Idea Loin of goat with Provencale zucchinis. Technical Data Harvest date: 1-10 May 2001 Alcohol: 14.2% pH 3.48 Acid: 6.1g/l Background The cabernet sauvignon label carries the name Cyril Henschke (1924-1979) as a tribute to one of Australia's outstanding winemakers and pioneers in the production of varietal table wines. Cyril Henschke planted cabernet sauvignon at Eden Valley in the 1960s. Vintage Description Good winter and spring rains continued on to our hottest summer on record. Occasional timely thunderstorms offered a few millimetres of wonderful refreshing rain. Vintage began two to three weeks early providing only average yields but exceptional reds.
