Soil: Domaine d'Escary is on a very stony, clayey limestone soil with excellent drainage.<br/><br/>Growing Climate: The climate is Mediterranean, tempered by light sea breezes. The vines are cultivated with respect to their environment.<br/><br/>Date of Harvest: September<br/><br/>Type of Harvest: Hand harvested in small cases followed by strict sorting.<br/><br/>Vinification Method: Both varieties are vinified separately. carbonic maceration (10 days) followed by traditional maceration (10 days) with cap punching. Pneumatic pressing.<br/><br/>Fining Collage: Light filtration before bottling<br/><br/>PH: 3.61<br/><br/>Sugar Rate: 0-5 g/l<br/><br/>Total Acidity: 3.32g/l<br/><br/>Free SO2: 11mg/l<br/><br/>Cork Material: liège<br/><br/>Cork Size: 45 x 24
