Soil: Domaine d'Escary is on a very stony, clayey limestone soil with excellent drainage.<br/><br/>Growing Climate: The climate is Mediterranean, tempered by light sea breezes. The vines are cultivated with respect to their environment<br/><br/>Date of Harvest: september<br/><br/>Type of Harvest: Hand harvested in small cases followed by strict sorting.<br/><br/>Vinification Method: Hand harvested in small cases followed by strict sorting. Both grape varieties are vinified separately with two different methods for each: - de-stemming, traditional long maceration (35 days) with cap punching. - carbonic maceration (7 days) followed by long maceration (25 days) with cap punching. Pneumatic pressing.<br/><br/>Age of Barrel: neuf<br/><br/>Type of Wood: chêne français<br/><br/>Level of Toast: moyenne et forte<br/><br/>Color Intensity: 10<br/><br/>Fining Collage: Light filtration before bottling.<br/><br/>PH: 3.86<br/><br/>Aging Time: 15 mois<br/><br/>Total Acidity: 3.07 g H2SO4/L<br/><br/>Free SO2: 18 mg/L<br/><br/>Cork Material: liège<br/><br/>Cork Size: 45 x 24
