Soil: Domaine d'Escary is on a very stony, clayey limestone soil with excellent drainage.<br/><br/>Growing Climate: The climate is Mediterranean, tempered by light sea breezes. The vines are cultivated with respect to their environment<br/><br/>Date of Harvest: september<br/><br/>Type of Harvest: Hand harvested in small cases followed by strict sorting.<br/><br/>Vinification Method: Hand harvested in small cases followed by strict sorting. Both grape varieties are vinified separately with two different methods for each: - de-stemming, traditional long maceration (35 days) with cap punching. - carbonic maceration (7 days) followed by long maceration (25 days) with cap punching.
