Food Pairings for Cuvée Aspergelabel Trimbach Wit Elzas
As a big fan of German Riesling, the drier, crisper style of an Alsace Riesling always comes as a shock to the palate and this one was no exception. I bought the bottle so my husband could try a different style, and while it was ok, I prefer Sauv Blanc or Chardonnay when I want a drier white wine. This one had lots of lively acidity and citrus flavors - would have been nice with a rich chicken dish.
This has to be the hottest Gewurz (Alsatian, thus no Umlaut) I have ever had. The alcohol completely overwhelms the spice. The color is rather ruddy, tending toward a copper hue, and the nose is very nicely in style, with tropical fruits, but instead of the long finish, you get the long burn. I cannot recommend this.

White flowers, lemon notes and minerality touch on the nose. Fresh and vibrant, grapefruit and citrus, white peach, this wine has a long finish which is a sign of a beautiful future for the wine.

The Wine Spectator just scored it 90 points saying "There's a pleasant salty tanginess to this wine, underscoring flavors of Gala apple, grapefruit and stone, with a hint of petrol. For 12 generations, the Family has been producing dry wines, very strictly structured, long-living and fruity, elegant and balanced: it's the Trimbach Style! The Trimbachs let their wines age in the bottles in the cellar for a few, or sometimes several years before they release them on the market, especially for the Great Wines, such as Riesling Cuvée Frédéric Emile. Maison Trimbach's vineyards are all situated around Ribeauvillé, where the soils are dominant in limestone. They benefit from the alsatian microclimate, thanks to the Vosges Mountains protection, which preserves the plain from the rain.Full, balanced and very aromatic. Depending on the vintage, the principal aromas of Gewurztraminer are lychee, rose, ginger and geranium. The 'Trimbach Gewurztraminer' is dry and shows classic restraint, without any loss of the Gewurztraminer's exotic and spicy feature. This wine has the intense aromatics to go brilliantly with Asian food but also extremely good with powerful cheeses. The Alsatians drink it with their brine-washed Munster, but it is equally at home with rich blue cheeses from Stilton to Roquefort.
