Food Pairings for Connetable de Talbot Saint Julien
External Reviews for Connetable de Talbot Saint Julien
A dependable and popular 4th Growth, Chateau Talbot relies on 66% Cabernet Sauvignon and 26% Merlot, with the balance divided between Petit Verdot and Cabernet Franc. Vines are kept at an average of 35 years of age. Grapes are sorted twice - in the vineyard and then on a table in the cellar - and fermented in either wood vats or stainless tanks. Connetable, the 'second' wine of the chateau, is the product of younger vines and is matured in one-fifth new oak. The 2000 Connetable offers a ripe, warm aroma with subtle and enticing hints of development (leather and tobacco) together with a ripe, plump palate backed by ripe acidity. The aftertaste is already expressive with an inky note that adds interest. Drink now or cellar to 2012-2014. Delicious value in an excellent year.
This classified growth of Saint-Julien owes its first-rate reputation to the particularly charming character of its wine. Unfailingly consistent, Talbot embodies with elegance all the complexity of its terroir. Its firm, well-rounded tannins offer a smoothness ever present over the years. Being highly concentrated, it can be left to age for many years even though it is tempting to drink it young to enjoy the fullness of its fruity aromas and silken finish.
