Food Pairings for Command
A gorgeous, complex and full-bosomed array of aromas leaps from the bottle at uncorking. Florals, spices and fruits blend harmoniously and evolve for several hours, intermingling with notes of cedar and chocolate. The palate is immediately and broadly spicy, with a plush center full of chewy blackberry, plum, tobacco and chocolate. White pepper and black pepper do a tango on the lengthy finish. A smooth, velvety mouthfeel surrounds a deep, complex medley of sweet and tart fruits, including plum and pomegranate, dark berries and persimmon, along with a seductive layering of various flavors, all of which come through as rich and round and juicy. This is a palate-filling, hedonistic wine drinking well now. 01/14/11.
A bit salty.
This was outstanding. Decanted for 2 1/2 hours, which I think is a must because the last bottle which I popped and poured (not recommended!) was not nearly as good. This one had a beautiful nose of raspberries followed by a full and silky mouthfeel with super-rich berries and stone fruit - smooth tannins and strong but not overwhelming acidity. But the finish - that's what's amazing. A super-extended 90 second plus finish. Outstanding.

Wine Advocate #161 (Oct 2005) The 2001 Shiraz Command exhibits a slightly more roasted character than the 2002 as well as a hint of espresso in the nose, a touch more alcohol, and more elevated tannin. It also possesses tremendous concentration, intensity, and power, yet remains remarkably well-balanced and pure. This 3,000-case cuvee is one of South AustraliaGs great classics. It should drink well for 15 years.
