Columbia Crest Horse Heaven Hills H3 Cabernet Sauvignon 2015

External Review by We Speak Wine:

GROWING SEASON: ■ The 2015 vintage was one of the warmest growing seasons on record in Washington. ■ Warm temperatures continued through the spring and summer, moderating slightly into fall and extending an early harvest. ■ Overall, 2015 saw very favorable growing conditions, producing optimal ripening across varieties and yielding outstanding wines throughout the region. VINEYARDS: ■ The Horse Heaven Hills vineyards are located in Eastern Washington. This region is mostly dry with less precipitation due to the rain shadow effect from the surrounding Cascade Mountain range. ■ The terrain consists of south-facing slopes that provide excellent sun exposure for grape ripening, and protection from cold airflow during the winter months. ■ Strong wind patterns in the Horse Heaven Hills reduce canopy size and density and contribute to even ripening by moderating temperature extremes. VINIFICATION: ■ Grapes were crushed and then fermented 6-10 days on the skins. ■ Malolactic fermentation occurred in stainless steel tanks and oak barrels. Blending occurred immediately after fermentation. ■ The majority of the wine (88%) aged for 9 months in a combination of new and older French and American oak barrels, while a small percentage of the wine (12%) aged in stainless steel tanks. TASTING NOTES: This bold Cabernet opens with flavors of black cherries and blackberries with a touch of currants and vanilla, complemented by earth and mineral notes. Deep berry flavors lead to a soft tannin cocoa finish. ~ Juan Muñoz Oca, Winemaker Blend: 77% Cabernet 21 % Merlot 2% Syrah Alcohol: 14.5% Total Acidity: 0.54 g/100ml pH: 3.78

Nice deep ruby in color. Upon opening, stony nose with blackcurrant and black plum aromas with a stemmy, earthy quality. Hints of bay leaf. On the palate, it has a huge entry with dark flavors of bitter cocoa, espresso, roasted meat, bay leaf, fennel, cassis and a graphite note with a chalky texture. Lingers on black coffee and smoke. It's unexpectedly brooding for this bottle of cab. For my taste, this needs time or serious decanting. It's well structured, but for me is astringent in its potency and darkness. Hopefully air adds some finesse. Recommended with food and with time open.

The Horse Heaven Hills AVA is a unique area in the Columbia Valley. The high altitude vineyards on south-facing slopes benefit from strong winds that arrive from the west via the Columbia Gorge. Cabernet grows well here taking on complexity and strength. Several of Washington’s cult wines are from the H3 including 100 point scorers. It’s also home to Columbia Crest winery where they focus on making wines that show off this exceptional terrior. This Cab is one of their best and one of the best values from the entire region. This 2012 is a blend of 94% Cabernet, 4 % Merlot and 2% Syrah aged in 40% new French oak for 18 months. The Wine Spectator scored it 92 points saying "Dark and spicy, billowing with plum, currant and white chocolate flavors, picking up pear and white tea notes as the finish lingers with refinement. The tannins are submerged. Drink now through 2018."

An aromatic offering of Cabernet with notes of char, butterscotch, vanilla and cherry with an underlayer of herbs. It’s elegant and soft in feel with chocolaty flavors and a grip of tannins on the finish.
