Today the estate extends for about 73 hectares in the region of Montoni Vecchi (province of Cammarata) at an altitude, which ranges from 400 m to 700 m above sea level and is situated in a highly productive area. Given the altitude, the ripening of the grapes isn’t affected by the torrid Sicilian summers, and the wines produced have the right alcoholic strength combined with a natural acidity and rich extracts. As we are convinced that the quality of the wine depends mainly on the vineyard, our attention is especially focused on cultivation techniques: the vines are trained using canopy and alberello techniques and pruned with Guyot and spurred cordon methods. The position of the vineyard is totally east facing. To the above can be added brave choices such as the reduction of the yield/ quintal- hectares, the thinning of the grape clusters and the selection of the grapes, with a notable reduction in the quantity in favour of quality (strategies made possible as the grapes, as already mentioned, come from our vineyards). The grape types we produce offer grapes of rare quality. Our wines derive from an age-old and unadulterated clone of the nero d’avola grape variety, which has been grown for centuries in the Feudo Montoni vineyards. These vineyards have always relied on the ancient technique of grafting on to wild plants,which are carefully tended for about a year and then a scion that has been taken from thevenerable mother plantis grafted on to them. Our mother plants contain the pure genetic code for Nero d’Avola , a closely guarded secret prospering in our vineyards. The delicate and time-worn process, carried out by old and trusted hands, bestows on the grape, and consequently the wine, greater character and affinity with the original nero d’avola vine; and, naturally, all is rounded off with style and refinement.
