Raised in a wine-making Burgundian family, Pierre Yves is intimately familiar with the vineyards and growers, a relationship which allows him to choose annually the absolute best of the crop from his preferred sites. He buys crushed grapes in the form of must, and sometimes only one barrel at a time. He has very high and strict standards of quality, and if he feels the wine, once fermented, is not of an acceptable caliber, he will sell it off in bulk rather than see it through bottling. His wines see no bâtonnage at all during their 15 -18 month élevage period.
