CELLAR: Franschhoek Cellar AREA OF ORIGIN: Single vineyard, Firgrove Somerset West VINEYARD: Unique layered sandy and tough gravel dry land 30 year old vineyards in Firgrove. HARVEST & CELLAR TREATMENT: Hand picked at optimum ripeness and fermented with punch down and “submerged cap method” until dry. Malolactic fermentation completed in stainless steel and matured in 50% American Oak & 50% French Oak for 13 months. TASTING NOTES: “Ripe mulberry and white pepper on the nose with layers of fruit, rich tannins and oak complexity on the palate.” SERVING: This wine will develop for a further 5-10 years and can be enjoyed with rich casseroles or hearty stews. ANALYSIS: Alcohol: 15.0 % vol Residual Sugar: 2.10g/l pH: 3.69 Total Acid: 5.92g/l
