Food Pairings for Clos du Val Stags Leap Cabernet Sauvignon
This is the perfect example of what 15-20 years in the cellar can do to well made and well structured wine that is merely 'above average' upon release. This wine has matured beautifully. Aroma is of intoxicating aged spices and dark fruit. On the palate is a perfect balance of the black raspberries and currants which give way to very gentle licorice flavors (don't worry, it's not too fruity) and a tinge of oak. And it is smooth smooth smooth. DRINK NOW! I am not sure how long it will stay this way, but I can tell you if you drink it now, you will not think "I should have left this in my cellar for longer"... you will enjoy every drop. 95+

Rich, dark-fruit flavors are punctuated by chocolate and dried herb-like notes, which linger on the long finish. While it is drinking well now, this could be easily cellared for 10+ years.
