Clayhouse Adobe Red 2011
The Adobe Red is a proprietary Zinfandel-based blend with effusive aromas of cherry spice, blackberry and pepper, with hints of brambles and plum. Cherry/berry flavors dominate on the palate. The tannins are fine and supple, and a bit of oak character adds additional vanilla notes to the balanced finish.

Fermentation: Cold soaked for 2 days before inoculation with various strains of yeast depending on variety and desired fermentation temperature. Pressed at dryness and inoculated for malolactic fermentation. Maturation: Aged on a combination of primarily 70% French oak, 20% American oak, and 10% Eastern European oak for 12 months. Tasting Notes: Dark black cherry, ripe blackberry and cocoa aromas. Soft sweet jammy strawberry and black fruit flavors combine in the mouth in this complex blend of fruit flavors. Tannins are soft and rounded with a rich mouthfeel and warm toasty vanilla laced finish. This wine is a reliable Jack of all trades, made for cheeses, meat and red sauce based pastas, bbq, pizza or just sipping with friends. pH: 3.77 Total Acidity: 6.8 g/L Alcohol: 13.86% Residual Sugar: 3.5
