to the finish. The acid level is very high, just that it appears to be very soft because of the richness of the fruit. Most Australian Chardonnays are drink now or at best only short term cellaring prospects, however this wine has the potential to age for at least 10 years. The wine should be served with suitably rich food. Crayfish or sweet crab flesh would be the best choices from the sea, however corn fed chicken that has been roasted and served with a full rich sauce flavored with truffles would be near perfection. The wine would also partner white mould cheese superbly because of the creamy nature in both cheese and wine.
