Ciabot Berton Barolo 2007

I decanted this wine over an hour before Thanksgiving dinner. Deep brick brown color with moderate aromas of cocoa powder, dried mushroom, stewed prunes, leather, and jerky. The palate was very flavorful with a distinct gaminess, graphite like pencil shavings, forest floor, mushrooms, dried prunes and cherries. This wine is dry, medium bodied, with very tart juicy acidity, medium to high tannins that were a little astringent and a very long savory finish. This wine even after decanting was still very tight but it paired nicely with the dark meat of the roasted turkey. I tried the wine the next day and it was even better showing lots of complexity. 4.5/5
