What to Expect

Chablis is a region of France's Burgundy region responsible for some of the most distinctive expressions of the Chardonnay grape. On the limestone rich soils of the area, Chardonnay produces wines that can be steely, yet rich with orchard fruits and mineral tones. Unlike the typical white Burgundy, most Chablis sees little or no new oak which allows the grape to express itself with a purity that barrel aging can obscure. Often quite reticent in their youth, Chablis may require several years of ageing in order to be able to fully express the depth and richness it keeps in reserve.

Winemakers Notes

Le terroir..............
The slopes, like those of all the Grands Crus vines, are located on the right bank of the Serein River.
This terroir form a valley between Les Clos and Vaudésir. Our parcels are located in two exposures, one in the north-west exposure (30 ares), and one in the south-east exposure (70 ares).
Density plantation: 7000 vines/ha.
Average age of the vines: 40 years.

Vinification..............
Harvested by hand, carried by small trailers which unload the grapes by vibration to avoid crushing, then we use a sorting table to eliminate read more...

Nicely mineral and well balanced with a solid amount of oak for a Chablis. Very nice. Served with heirloom tomato salad and charcuterie. Followed by sea bass.

Rating: 16/20 - As reviewed by Jancis Robinson Similar citrus minerality as for the Vaillons, but more fruit mid palate. Very pure and restrained. Spicy on tongue tip with mouth-watering acidity.
